Usually. Ready-mix arrives batched, so the pour itself does not depend on your water. Curing can, depending on the method and the weather, and that is a detail we will sort out at the estimate rather than on the day.
Yes, and it is common here. Tell us what is eventually going on it — a slab poured for a future shop is a different specification from one poured for a travel trailer, and it is much cheaper to build in the capacity now.
